Sweet Potato and Black Bean Tamales

One of Dana’s friends came over today and they took over the dining room table to make sweet potato and black bean tamales. Instead of corn husks to wrap up the tamales, they spread the masa on coffee filters that had been spread with oil and lecithin.

Next they added the sweet potato mixture…

…then the black bean/onion/chipotle mixture…

…before rolling up the tamales

and folding up the coffee filters.

When the black beans ran out, they made some with sweet potato and spicy cheese.

Then they steamed for about 45 minutes.

It didn’t take near that long to eat them!
